Beef

We rub our beef with a dry rub recipe that has been handed down for many generations. The beef is hand trimmed so there is only enough fat left for flavoring. All beef is slow smoked over a blend of cherry and red oak wood logs for 8 to 17 hours depending on the cut of meat. This slow smoking process ensures our beef is juicy and tender.
